Tapioca Combo Dessert
4 cups of water
1 1/2 cups of sugar
1 teaspoon of salt
2 cobs of sweet corn (remove kernels from cob)
2 cans of coconut milk (13.5 ounces each)
1 can of sugar palm seeds (23.6 ounces, also called attap, do NOT drain syrup)
1 package of dried tapioca dice (3.5 ounces: soak in warm water 3-4 hours)
1 package dried tapioca strips (7 ounces: soak in warm water 3-4 hours)
In a soup pot, bring water, sugar, and salt to a boil, and cook for 5 minutes. Add the sweet corn kernels, and cook for an additional 5 minutes. Pour in coconut milk and allow to boil for 3 minutes. Remove from heat, pour in sugar palm seeds (with syrup), and set aside.
Fill a soup pot with water and bring to a boil. Add tapioca dice and cook for 30 seconds. Follow with tapioca strips and cook for 1 minute. Drain tapioca in cold water and combine with coconut milk mixture.
Serve warm, or cold (with ice cubes).

This was really really really yummy! I wouldn't change a single thing about this recipe, except, I might add a little more sugar.
Otherwise, this was perfect. I made this as dessert after a "Thai food Party" on Friday, and I had some left over on Saturday, so I had it breakfast and lunch. It was super awesome. Super yummy, too. I might have already said that, though. ;D
