Amazopwn Chocolate Avocado Muffins
What you need:
1/3 cup vegan margarine
1 teaspoon vanilla
1/2 cup sugar
6 tablespoons ground flax seed + 2/3 cup water
1 1/2 avocados, mashed
1 teaspoon baking soda
2 teaspoons baking powder
1/2 tablespoon salt
1 3/4 cups whole wheat pastry flour
1/4 cup cocoa
nondairy milk, as needed
few handfuls chocolate chips
What you do:
1. Preheat to 350 degrees F. Cream the margarine, sugar, and vanilla together. Then add your flax eggs, then the avocado.
2. In a separate bowl, mix the baking soda, baking powder, salt, flour, and cocoa powder. Add dry to the wet. You may need to add a splash of nondairy milk depending on the texture.
3. After all is mixed, add in your handfuls of chocolate chips. Bake for 25 minutes.

SO HOW'D IT GO?
I love this recipe, the texture is soft compared those I baked before using mango/pumpkin. Is it the cocoa powder that creat the soft texture inside? I just used normal white flour for baking. :)
Just realized I never did post my full review.
The muffins were excellent, in my opinion, however my omnivorous family wasn't so pleased with them. Mostly because they were expecting a chocolate cupcake (though I did say they are NOT cupcakes). They're not very sweet and some what dense, but that's what I'd look for, and expect, in a muffin. :)
1/2 tablespoon salt seemed like way too much to me, so I cut it back to 1/2 teaspoon. They taste sooo good, especially with cherry jam. :) Makes the house smell super yummy too. Just have to test them on the omnivores now... I'll probably post once they'vre tried them out.

These sound great. I love avocado and chocolate together. Also nice that you used whole grain flour! I will have to try them this week.
These were AWESOME! I made them for a potluck lunch at work, and everyone raved. They were also very curious about the avocado. I couldn't believe how much they rose -- the muffins were huge, and chocolately. I used Ener-G instead of ground flax, but otherwise followed the recipe exactly. I am making these again for another potluck lunch at my son's daycare. Everyone should make these muffins!!
