Best Basic Guacamole
What you need:
1 lime, divided
2-3 medium sized ripe avocados
2-3 garlic cloves, minced
1 medium tomato, diced
1/2 teaspoon salt
pepper, to taste
What you do:
1. In a medium sized bowl, squeeze enough lime juice to cover bowl (just so avocado will be in contact with the lime juice). Scoop out the avocado and place in the bowl.
2. Add the garlic, and the rest of the lime. Squish the avocado mixture with a fork until it is to your desired texture (I like mine pretty smooth).
3. Add the tomato, salt, and pepper, and mix. Taste and add more salt or pepper if needed.
We love it on bean and rice tacos, or just with baked tortilla chips!

Well, I just started doing it so that when I put any avocado in there..it would keep more of its green color. Since it's in there..while I'm chopping up other things. I don't know that it makes THAT MUCH of a (or any?) difference, but hey..why not?! I've noticed that my guac always has a brilliant green color, and stays that way for a long while (until it's all gone). So, maybe try it and see if you can tell a difference. I really love fresh jalapeño and basil in there too. It's my new default way.
When I make guacamole I always prepare the avocado last. This, in addition to the lime juice (also for great flavor), helps keep everything as green and fresh looking as possible. And when you store it you can put some plastic wrap directly on the surface as you would a pudding to keep it from forming a "skin." I still have plastic wrap from years ago that I wash and reuse :D

My boyfriend often buys store made guacamole. He pays a fortune for it too. I used this recipe to show him how easy it is to make homemade guacamole. From now on, this will be our go-to guacamole recipe.

This was great. I added half of an onion finely chopped and lots of fresh cilantro. If you are taking this somewhere and do not want it to brown, you can save the pits from the avocado and place them in the bowl and remove when serving.

I made this last night and it was so yummy and fresh. I ate it as is and also used it to make a quesadilla. Delicious!
