2 banana peppers, finely chopped
1/2 red pepper, finely chopped
1/2 yellow pepper, finely chopped
1/4 green pepper, finely chopped
3 roma tomatoes (less water), finely chopped
1 clove, minced
chili powder, to taste
cayenne pepper, to taste
red pepper flakes, to taste
3 green onion bulbs/stalks, chopped
Cilantro (lots) to taste
1. Add all peppers and tomatoes to a sauce pan. Add garlic, seasonings, and green onion.
2. Set stove to low heat and mix together. Turn stove off and cover pan. Let sit for a few minutes, or store and let flavors mix. Stir in cilantro, and serve.
Went really well with black bean tacos!
Source of recipe: I bought some banana peppers a few days ago and needed to use them up, plus wanted to get rid of some other veggies and was feeling lazily creative in the kitchen.
