10 Minute Turnovers
1-2 gala apples, chopped
2 tablespoons water
3-6 tablespoons sugar
1/4 teaspoon vanilla
1 teaspoon cinnamon
pinch nutmeg
1 teaspoon arrowroot powder or cornstarch + 2 teaspoons water
1/2 pound phyllo dough, thawed
1/4 cup vegan margarine, melted (I use Earth Balance)
1. Preheat oven to 350 degrees F. In a small pan, placed apple, water, sugar, vanilla, cinnamon, and nutmeg. Cook on medium heat until apples start to get tender (not completely!).
2. Push the apples to one side of the pan, pour the arrowroot mixture in, and stir. Cook a few minutes more. Remove from heat.
3. Lay 4-5 sheets (more if you like really thick crust), delicately one at a time on a baking sheet. Brush each layer with vegan margarine. I just brush the first, middle and last.
4. After you have the 'crust' prepared on the pan, slice into 3 parts, widthwise. Place 1 tablespoon apples/sauce in one corner and fold like a flag, making a triangle over and over. Do this with all of them, and bake for 5 minutes.
Phyllo can be frustrating. Make sure you have super dry hands, and if it messes up or you end up with a lot crazy pieces, just put them together and put the apples on top! It will still taste wonderful! So in this way, you can't mess up too bad! Great with some chai!
