Aly's Peanut Butter Cookies
1 medium or large banana
1/2 cup vegan margarine
1/2 cup natural or organic (only) peanut butter
1 cup Sucanat or brown sugar
1 teaspoon almond or vanilla extract
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon cinnamon
3 cups oats
1/4 cup chocolate chips, optional
1/4 cup raisins, optional
1/4 cup chopped peanuts, optional
1. Preheat oven to 350 degrees Fahrenheit. In a large bowl, mash banana with a fork until fairly smooth. Beating it with a whisk after you are done mashing helps it smoothen nicely.
2. Add the vegan margarine and peanut butter to mashed banana, mashing the margarine with a fork. Add sugar and extract and whisk until smooth.
3. In a separate bowl, mix the flour, baking soda and cinnamon. Add to wet ingredients, then mix in oats. Add chocolate chips, raisins and/or chopped peanuts, if desired.
4. Take a spoonful of the mixture and roll it into a ball, slightly flatten and place on cookie sheet.
5. Once all cookies are on the sheet, bake for 10 to 20 minutes (depending on your oven), or until the tops are slightly firm to the touch. Take out of oven, let cool for 5 minutes and enjoy!
When following these instructions, these are probably as healthy as yummy peanut butter cookies get!
Source of recipe: I used to just bake things from boxes, but recently I occupied myself by baking from scratch! I tried a peanut butter cookie recipe and hated it, so instead, using only the same amount of baking powder, I experimented with making my own peanut butter cookies. My family and friends all love these!
SO HOW'D IT GO?
I really liked this a lot. I also didn't have margarine so i used vegetable oil... but i was thinking of trying them next time with peanut oil... might help bring out the peanut flava... i also only used 1 cup of the oats... b/c i didn't want them to be too dry... i really wanted them to come out crispy b/c that's the way i like my cookies. i thought the banana gave them a nice flava - i'm sooo making these again! :D
Didn't have any margarine, so I used 1/3 cup applesauce with 2 T oil instead. They came out chewy and tasty, but the banana flavor was very strong (then again, I did use a pretty large banana). I could hardly taste the peanut butter. And while they were still good, they're supposed to be peanut butter cookies. So if I make them again, I'll definitely up the pb...
Anyone have any idea why it says to cut 1 cm. off the top of the margarine??

Oh my goodness, these are so delicious! I was able to make them without having to buy anything special. They kind of taste like granola bars. I added the raisins to mine. I will be making these again!

This cookies need more recognition. These are the best homemade vegan cookies I have EVER made for sure. Jeeeeez. They have such a good texture- they are fluffy- not to soft or crunchy- just right!!
I only had half of a banana and they came out fine.
I added walnuts and sesame seeds because that's what I had in my cupboard and it was DELICIOUS!!

These are a new favourite of mine. I've made them 2 or 3 times now, and they're great! They taste great dipped in soymilk. I did add chocolate chips once and it was delicious.
this is one of the rare recipes that escape my heavy modifications. the oatmeal gives it the perfect texture. a little added peanut butter tones down the banana a little, but the flavors work so well together that it hardly matters.
PB cookies w/ cinnamon is, quite possibly, the only way one should ever eat PB cookies. I've been making them like this for years and no other peanut butter cookie can campare.
