Amazing Rosemary Bread

What you need:

1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons vegan margarine, divided
1 teaspoon salt
2 1/2 cups flour, divided
2 tablespoons fresh rosemary, chopped, divided

What you do:

1. Place yeast, sugar and water in large bowl or food processor and allow mixture to become bubbly. Mix in 1 tablespoon margarine, salt, and 2 cups flour.
2. Add one tablespoon of the fresh chopped rosemary. Knead for about 10 minutes by hand or in food processor about 5 minutes until smooth and elastic. Add more flour if necessary.
3. Oil a bowl, put dough in it and cover with a towel. Let dough rise in a warm place for one hour until doubled. Punch down dough and divide in half. Let dough rest about 5 minutes.
4. Shape the dough into 2 small rounded oval loaves. Sprinkle remaining 1 tablespoon rosemary over the loaves and press lightly into the surface. Let loaves rise again until doubled, about 45 minutes. Grease a baking pan or sheet, and preheat oven to 375 degrees F.
5. Bake for 15 to 20 minutes, until lightly browned. Carefully remove from oven, brush with remaining vegan margarine (and salt if desired).

SO HOW'D IT GO?

WOW-this bread must be absolutely fool proof. I could tell from the very beginning that my yeast wasn't active (it didn't bubble at all), but I went ahead with it. My dough was extremely sticky..so I added some flour..stayed sticky..some more flour..still sticky-went with it again. It basically didn't rise at all in an hour..so it looked like I just had enough for one loaf. I let it set for a few minutes..but since it wasn't rising, I went ahead and put it in the oven (thinking it might taste ok, but would be pretty flat). I even forgot to put the rosemary on top at first..but put it on after a few minutes, and added some olive oil. I probably baked it for close to 30 minutes since it was just one loaf...and it was fabulous! I don't recall Macaroni Grill's bread, but that is irrelevant. My husband and I ate more than 3/4 of it in a few minutes. Yum!  :)>>>

Oh Man!  Seeing this recipe has just made my day!!!! I even have fresh rosemary in the fridge, so I will definitely be making this REALLY soon!!!  I LOVE the bread at Macaroni Grill!
Thanks for posting this.  I'll post my review when I make it.

I made this with 100% WW Spelt Flour.
It was fabulous!
Although not as light and fluffy on the inside like the MG one, it has a familiar taste and was so good!

This bread is sooooo good, especially with baked garlic spread on top.

Having never been to Macaroni Grill, I decided to make this with a mixture of herbs and sundried tomatoes.  It is delicious and a wonderful texture.  The only thing that is weird about it is that it doubled horizontally during both rises.  It's really wide and kind of flat.  Is it supposed to do that?

This really did taste like the bread from Macaroni Grill.

I will definitely make again soon since the recipe was very simple for hand made bread.  In the past I have not had good luck making bread from scratch, but these were perfect!

These loaves were quite handsome, as well.

This bread really is just like Macaroni Grill's rosemary bread.  My daughter ate an entire loaf all by herself last night.  Fortunately I got pictures first and will download and post them later.  I chopped up the fresh rosemary that was kneaded into the bread, but left the leaves that I pressed on the top whole.
