Apple Cinnamon Pancakes
What you need:
1 cup unbleached all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
2 tablespoons vegetable or olive oil
1 cup vanilla nondairy milk (I use soy)
1 teaspoon ground cinnamon
3 tablespoons apple sauce
1/2 teaspoon pure vanilla extract
What you do:
1. Preheat an oiled griddle until hot. Combine the flour, vegan sugar, baking powder, salt, oil, and nondairy milk in a bowl and mix thoroughly.
2. Mix in the ground cinnamon, apple sauce, and vanilla extract until smooth.
3. Pour about 1/2 cup (for big thick pancakes) onto prepared griddle. In about 2 minutes, bubbles will appear on the upper surface of the pancake, flip the pancake with spatula. Cook for another 2 minutes.
Tastes great served with maple or fruit syrup.

I was VERY excited to try these. I doubled the sugar like some people suggested but it was still very bland. I kept adding more sugar to the batter after trying the pancakes and didn't really taste like anything to me... No offense to the person that submitted the recipe but I was really hoping for an apple cinnamon taste and this didn't deliver it. :(

i think sugar should be upped because i found them not sweet enough, however they're just perfect if you use sweet topping like jam or syrup. 1/2 teaspoon of cinnamon was fine, i don't like if cinnamon gets bitter.
these were first 'puffy/spongy' kind i made and i loved them. even my mother ate 3!
Delicious. Mmm! I used a little over a quarter cup of applesauce, no oil, and I sliced up an apple nice and thin and folded that into the batter. Ate 'em with maple syrup. So good! Damned if I didn't just eat the whole yield of the recipe myself. Whew! :)
these are the best pancakes I've made yet! i used the oil in the pan, not the batter.
Good recipe. I used cinnamon applesause and plain soymilk. I also added more sugar because I wasnt using any syrup. I don't recommend using olive oil though, either vegetable oil or more applesause.
I also added slices of apple to the batter, which added more yummy apple-ness.
I just used plain soy milk, and it was fine.
These are my favorite pancakes. I make them all of the time. I love them. ;D
