Apple Cinnamon Pecan Pancakes
1 1/4 cup flour
1 1/4 cup soy milk
1 teaspoon egg substitute (like EnerG)
1 tablespoon hot water
1 tablespoon canola or vegetable oil
vanilla
1 teaspoon cinnamon
2 apples, cored and thinly sliced
pecan pieces
syrup
sugar
Mix flour, soy milk, egg replacer, water, oil, 1 t of vanilla, and cinnamon. Add 1 apple and a handful or two of pecan pieces.
Ladle about 1/3 cup or so of mixture onto a heated and oiled crepe pan. Cook over medium heat until bubbles begin to appear on top side (approximately 1 minute or so). Flip and cook on the other side until brown (about 1 additional minute).
Place the finishe'd pancakes in the oven to keep them warm while making the topping.
In heated pan, pour about 2 teaspoon of vanilla, add second apple, another handful of pecan pieces, syrup, and a little sugar, if desired. Cook until apples soften a little, about 2-3 minutes. Spoon topping over pancakes and enjoy!
