Apple-licious Oatmeal
1 med-large apple
1 tablespoon maple syrup
sprinkling of cinnamon (to taste)
1/2 cup quick cooking or old fashioned oats
1 cup water or soy milk
Optionals: raisins, sunflower seeds, peanuts, almonds, dried cranberries, etc.
I've been using tart Granny Smith apples because they're on sale, but I've tried all kinds of different ones, and they're all delicious!
1. Peel apple and slice into bite size pieces. (I like to nibble on the peelings while I wait for this to cook). Place slices into a medium sized pot with a lid. Add maple syrup and cinnamon. If you do not have maple syrup, you can use another sweetener- but you may want to add a little bit of butter to keep the apples from sticking to the pan. Cover with lid.
2. Heat on low-medium setting (on my range, it's "3") for 5-8 minutes (depending on how crunchy you like your apples. I like mine nice and soft like apple pie, so I leave them in for a good 8 minutes).
3. Once apples are cooked to your liking, add water/soymilk and cook oats as indicated on package.
Serve with a splash of soymilk to cool it down.
