Avocado Dreaming
1 cup aromatic rice (I used Jasmine)
15 oz. can kidney beans (or pinto/black/garbanzo)
1 medium tomato, diced (or 2 small ones per serving)
1 large avocado, chopped
1/2 cup pecans, chopped
lemon juice, salt, pepper (to taste)
salt substitute or preferred seasoning blend (I use Original Spike Seasoning)
1. Cook the rice according to package directions (or your own preferences).
Meanwhile:
2. Drain and rinse the kidney beans.
3. Slice the avocado into wedges or cubes.
4. Chop or dice the tomato.
5. Chop the pecans.
6. When rice is done, layer ingredients in two bowls starting with the rice and ending with the pecans.
7. Add seasoning (lemon juice, Spike, etc.) to taste.
8. Enjoy!
*This will only take about 5 to 10 minutes if you already have rice left over from last night's dinner!

SO HOW'D IT GO?
This recipe was pretty flavorful. I was definitely craving some sort of sauce or something to go with it. I'm maybe thinking of making a tomato sauce instead of just chopped up tomatoes next time. Not sure....
I just made this tonight with quinoa and it was delicious! I didn't make any changes at all.
i was cooking just for myself tonight, and so i wanted something easy. this was so simple and delicious! i think i will be making this often as a light summer dinner this year. i followed the recipe exactly except i added some green onions and just mixed everything together instead of layering. i had never used Spike seasoning, and that stuff seems pretty handy! thanks for the recipe.

i made this for my lunch tomorrow! so so easy. i added some cooked some onion and mushrooms with olive oil and salt and added a layer of that. instead of pecans i only had cashews so used those instead. i took a bite just now and its so yummy! (healthy too! yeah protein!!) excited for my lunch tomorrow.. :) thanks for posting!
