Backpacking Tacos
12 tortillas
1 cup dehydrated refried beans
2 cups TVP crumbles (beef or chicken flavor)
1 cup vegan taco seasoning
vegan cheese, to taste
2 1/2 cups water, divided
1. At home, pack beans in a zip-top bag, tortillas in a bag, TVP and seasoning in a bag. Pack cheese by itself with a cold pack.
2. In camp, boil 1 1/4 cups water with TVP and seasoning. Reduce heat and simmer about 5 minutes. Remove from heat.
3. In another pot, boil 1 1/4 cups water for beans. Add beans and constantly stir to mix. This is like cooking old-fashioned oatmeal; stir constantly and carefully. Remove from heat and keep stirring.
4. Add TVP and cheese to tortillas, and serve beans with tacos.
If you bring vegan cheese, this should be your first night meal. Tortillas are very heavy. You could serve over instant rice instead, or make this a first night out meal. If you only have 1 stove or 1 pot, add water to dehydrated refried beans the night before in sealable bag (like Ziplock), and let sit all night and the next day instead of cooking them. Remember to leave no trace.

SO HOW'D IT GO?
This is exactly what I make while backpacking, with a little nutritional yeast and salsa if I happen to come across the little packets of it. I'm planning on eating this quite a bit on the AT. Your recipes should be in the hiking/camping section of vegweb too.
