Baked Doughnut Nuggets

What you need: 

Donuts:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup vegan butter, at room temperature
1/3 cup sugar
1 egg substitute (I use 1 tablespoon ground flaxseed + 3 tablespoons water)
2/3 cup nondairy milk (I use soy) Topping:
2 tablespoons powdered sugar
1/4 teaspoon ground cinnamon

What you do: 

1. Preheat oven to 350 degrees F. For donuts, combine flour, baking powder, nutmeg, and salt in medium mixing bowl.
2. In a separate bowl, whip butter and vegan sugar until light and fluffy. Beat flax and water together for egg, and let sit 1-2 minutes.
3. Add egg substitute to butter mixture, and beat until well-blended. Add 1/2 the flour mixture, mix; stir until smooth. Add 1/2 the milk; stir again until smooth. Repeat.
4. Spoon batter into miniature muffin tins until 2/3 full. Bake for 20 minutes. Let cool 5 minutes before removing.
5. For topping, in a bowl, combine powdered sugar and cinnamon. Roll nuggets in sugar mix, and enjoy!

SO HOW'D IT GO?

I baked these in mini muffin tins, and made them pretty much as the directions stated, since they were a surprise anniversary breakfast for my husband.  I also dipped them in melted chocolate (with a little mint extract, because he loves it) and put some sprinkles on top.  I was thus able to remember they were dessert and not eat any myself!  But he absolutely loved them - I think there were about 2 dozen, and he disappeared them by himself in a couple of days.

Awesome recipe!!! They actually taste like baked donuts!!!! I made a light glaze using powdered sugar and water..YUM!!! 5 stars all the way!!!

I liked these - mine came out almost too dry though so I think next time I'll use less flour (I tend to always use less flour than recipes call for because im not big on flour) Thanks for this!!  ;)b

I did this one last night.... Oh, they are delicious.... very addictive  :D  I made them in regular muffin pans and I got 10 donuts muffin shaped. 
As another poster said, the nutmeg is a bit much and really dominates the flavor... perhaps next time I will use a bit less.... other than that.... I LOVE IT!!!  :)>>>

I just made these and I thought they were really good.  I glazed some with icing and then sprinkled them, and also put some shredded coconut on some.  The rest I just rolled in the sugar/cinnamon mixture.  I used a mini muffin tin.

Not sure why people are saying they don't taste like a donut.  To me they have the same texture as a cake donut from Dunkin' Donuts.

These are really good! I used the same vanilla glaze that healthymomma mentioned.  I also added cocoa powder to half of the batter to make chocolate doughnuts, but I thought the regular were better.

Well..mine turned out like muffins. This could possibly have been b/c I used a regular sized muffin tin. Maybe my batter was too thin so they spread out into muffin shapes? I used 1/2 applesauce and wheat flour..and filled half of them with blueberry fruit spread. They were pretty good tasting muffins, though.. :-\

I made these with half oil and half applesauce, following the rest of the recipe exactly (which is odd for me). They were a nice light texture and had a doughnutty taste. My family loves these. I made http://vegweb.com/index.php?topic=6817.0=Vanilla Glaze, then sprinkled icing sugar and cinnamon on top. Now once I figure out how to add this picture I have, I'll be set...
