Baked Potatoes Au Gratin
What you need:
4-5 medium Yukon gold potatoes, sliced
1/2 cup chopped spinach, optional
vegan butter, to taste
2 cups plain nondairy milk (I use soy)
2/3 cup nutritional yeast
1 tablespoon flour
vegan bacon bits, to taste
French fried onions, to taste (I use French's)
salt and pepper, to taste
What you do:
1. Preheat oven to 375 degrees F. Place potatoes in a casserole dish. Add spinach and top with butter.
2. In a separate bowl, whisk together milk, flour, and yeast. Pour onto potatoes. Top with vegan bacon bits and fried onions.
3. Cover and bake for about 1 hour, or until the top is browned and potatoes are cooked. Top with more vegan bacon bits and fried onions. Serve.

SO HOW'D IT GO?
So, so, so good! It more than satisfied the craving I was having for the boxed potato crap I grew up eating. Though we love nooch, I was skeptical that a sauce of just nooch and soy milk would be any good but I'm glad I believed the reviews and gave it a chance. I skipped the butter to cut a few calories and the flour because I'm trying to avoid wheat. I figured the starchy potatoes would thicken the sauce and it worked out perfectly? I used half rice and half soy milk to avoid that soy flavor from coming though plus a healthy splash (maybe a glop? Is that a thing?) of hot sauce because that always makes "cheese" sauce taste cheesier to me. I served it with some grilled asparagus and though we didn't have any bacon bits, fried onions or spinach, I can only imagine they kick this recipe up to out of this world. Either way, this'll become a part of our dinner rotation.
This was was a great dish. We liked it very much, heats up well, or can be eaten as cold left overs. Very good, we will make again. Here are the changes we made; instead of the dried onions we fried some up in olive oil, and put them on top. No bacon bits.
I liked this recipe, but made a few modifications. First off, I sauteed the spinach with the butter, and added crumbled tofu (frozen/thawed). I like to add protein to every dish. Also added some salt, pepper, and some other seasonings (mrs. dash). It was yummy!
This was very good. I added more spinach and some fresh parsley. It was filling but not heavy.
Mmmmmmmmmmmmmmm good. Didn't have fried onions, added chopped mushrooms. Wanted to take the author's advice and serve with green beans - but I didn't have any (so I ate it by itself). Would have made the perfect meal. I've never made potatoes au gratin from scratch and rarely make it from the box. I really surprised myself. Really, really good. Everyone should try this recipe.
Made this for dinner tonight and it was amazing. I made a few changes I wanted to share. Ba-cos scare me a bit, so instead I used light life tempeh bacon. Browned it in a skillet, cut it into bit sized pieces, and put it on top of the potatoes. I doubled the spinach and added fresh broccoli. Baked it for an hour and it tasted like a loaded baked potato!

This is soooo good. I love the spinach in it.
I didn't care for this much at all....the nut. yeast tasted fake and awful I wish I liked it cause it sounded so delicious. The only thing I didn't put in it was bacon bits. I feel awful because I'm the only one who didn't care for it.
I don't like the taste of nutrtional yeast either, kind of a bummer cause all these recipes that use it as a cheeseey ingredient, I have not liked one!! wish there was something else i could substitute cause these potatoes sound and look super good!!!
I made this recipe and it came out wonderfully!! My alterations: I added half of a small diced onion, sauteed, to the potatoes. I also blended a whole small tomato into the sauce to give it more colour and flavour. Added some garlic salt, onion salt, pepper, and margarine to the sauce as well.
