Baked Sweet Potato "Fries"

What you need: 

3 sweet potatoes, cut into sticks (like fries)
1/2 tablespoon extra virgin olive oil
2 to 3 tablespoons brown sugar, or to taste, optional
1 teaspoon sea salt, optional

What you do: 

1. Preheat oven to 450 degrees F. Place sweet potato sticks in a 9" x 13" baking dish. Drizzle with the oil and toss until the bottom of the pan and the potatoes are coated.
2. Place in oven and bake for 15 minutes, or until they look golden brown on top.
3. Take them out and flip the potatoes over so the brown side is down. Sprinkle with the brown sugar and salt. Bake another 5 minutes, or until slightly golden on the other side.
4. Remove from oven, shift around a little in the pan, and enjoy!
These are great with a good spinach and fruit salad and pretty healthy. They're actually very good without the salt and sugar too.
Source of recipe: The restaurant I work at serves sweet potato fries, and I've always wanted to try them, but don't eat fried foods. I thought they would be good baked and much healthier.

SO HOW'D IT GO?

So, I ended up cooking these for 30 minutes total, 15 of which were spent under foil. They didn't crisp, but they didn't end up completely soggy; when I pick it up, it kind of holds its shape instead of just flopping over and breaking into two pieces. They taste really good, and go wonderfully with my salad and chick'n tenders. Very delicious, and I will make them again. Oh, one more thing! I was only able to fit one large sweet potato into my 9x13 (without stacking the fries on top of each other), instead of 3. But when I say large, I mean GIANT, like freak of nature size (at least the size of 1 and 1/2 "large" Idaho potatoes, maybe 2). Obviously size is relative, but do be careful when picking your sweet potatoes, or you'll end up with either way way extra, or having to do like three or four batches all together.
