Banana Black Beans

What you need: 

2 cups cooked black beans (if using canned, rinse well)
1/2 cup coconut milk (light can be used)
1/4 cup plain nondairy milk (I use soy)
2 stalks green onion, diced
1 heaping teaspoon hot chili powder
2 bananas, chopped into 1/2" pieces

What you do: 

1. Place cooked black beans into a medium saucepan with coconut milk and nondairy milk and heat on medium-low for about 3-4 minutes. Stir occasionally.
2. Add chopped green onion and hot chili powder, and allow the liquid to reduce and become bubbly, still stirring occasionally.
3. Add chopped banana, stir, and allow to heat through. (banana shouldn't be added too early or else the pieces lose their shape and become mushy). Add more milk(s), if needed.
Served on a bed of brown rice, with a salad on the side this is easily one of my favourite quick and healthy meals and is so, so delicious!!!

SO HOW'D IT GO?

After reading all of the positive reviews of this recipe, I decided to finally try it tonight. Although it was edible, it certainly was not my favorite use for black beans or bananas. The combination just did not taste quite right to me--I only used one banana and it was still very overpowering (and I LOVE bananas). I probably wont end up making this again, but it was fun to experiment!

Good recipe. I wasn't sure what to expect, but all of the other reviews were helpful. I don't care for bananas, but I did enjoy them in the recipe. I did not care for it as much the next day nuked in the microwave tho, I'm gonna have to figure something else out for the reheating.  :)

This was delicious and quick! I substituted the soymilk for more light coconut milk and used dried hot pepper flakes as well as chili powder for heat. Also, dried shredded coconut makes a nice garnish on top.

I just made this just to take a picture of it.  I was really skeptical about mixing it up with bananas and coconut milk,  but it's actually pretty good it just needs a little salt cause it's too bland.

Don't know if I'm really qualified to review this recipe since I changed it up so much, but I did do the black beans/banana/coconut milk combo.  Coconut milk, to me, says curry, not cumin, so I doubled the beans to 4 cups cooked, one can of LITE coconut milk, 1 tsp curry pwd, 1/2 tsp garam masala, 1/4 tsp cayenne, about 1/4-1/3 cup chunky pb (sounds weird with beans, I know), and a healthy amount of salt.  The pb thickened up the milk, then I added the two bananas.  I served it over brown rice.  I thought it was really good, if a little unusual.  My husband wasn't so sure, but he's willing to withhold judgement until he tries it again after it's had time for the flavors to meld a bit more.

Overall, I would say definitely yummy comfort food.  I would make this again.

i made this recipe because i love black beans and i love bananas but i really think this recipe is a little too plain. it needs more flavor than just heat. i might play around with it soon.  :'(

This recipe had my curiosity up for quite awhile and I FINALLY got to make it.  I followed the recipe except for using homemade almond milk instead of soy.  The outcome was good, unique, but not too exciting.  My curiosity is satisfied and my belly :P
