Banana Bread

What you need: 

1 teaspoon vinegar
1/3 cup nondairy milk
1 3/4 cups flour
1 1/2 cups vegan granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (2 to 3 bananas)
1/2 cup vegetable oil
2 to 3 egg replacers (3 1/2 teaspoons Ener-G + 5 tablespoons water)
1/2 cup pecans, optional

What you do: 

1. Preheat oven to 325 degrees F. Grease a 9x5" bread pan. For buttermilk, place vinegar in a measuring cup. Add nondairy milk to 1/3 cup line. Mix and set aside.
2. In a bowl, mix together flour, vegan sugar, baking soda, and salt. In another bowl, mix together bananas, oil, and buttermilk mixture.
3. Combine the banana mixture and flour mixture; stir well. Stir in the egg replacer and then stir in pecans. Pour into prepared bread pan. Bake for 1 hour and 15 minutes, or until a toothpick in the middle comes out clean.
I made this earlier today, and it was delicious! It tasted just like the banana vegan bread my mom used to make. It also rose perfectly, unlike most vegan breads and cakes I usually make. This is perfect with some vegan butter (like Earth Balance). I hope you enjoy it as much as me (and my non-vegan family) did!

SO HOW'D IT GO?

I have to concur with everyone here.  I made this and it was amazing.  Very moist.  Adjustments I made:  I reduced the sugar to about 2/3 a cup and replaced with about 1/3 agave nectar.  It was still a bit too sweet for me so next time I will reduce the sugar even more.  I also added 1/3 cup of cocoa powder and a pinch each of cinnamon, nutmeg and allspice.

Hi I am a new member and I have tried 2 other banana breads on this site but by far this is the best banana bread I have ever tasted!  :)>>> I did use whole wheat flour and I also used flax for the egg replacer. I also added about a tablespoon of molasses. Before it even had a chance to cool my 12 year old vegan son had eaten nearly an entire loaf!  And my non-vegan 15 year old loed it too. An awesome, delicious, wonderful bread!    ;)b

I made this bread last week and I'm about to go make it again. My roommate is in love with it and has declared that Thursdays are banana bread day. (No bread this Thursday because of finals, though.) He ate half of the bread in one sitting!

I saw all the comments about using less sugar, so I only used 1 cup. I also added some cinnamon (about 2 tsp) and allspice (1/2 tsp).

It came out sooo moist and dense! Yum!

This was REALLY good!I threw in some walnuts and only used two bananas and I had to cook it longer on higher heat.(I have a really crappy electric stove)My non vegan friends RAVED about it.It was extremely moist and sweet.Great recipe.

;)b  This was great.  I haven't had much luck with Banana bread in the past, so this was fantastic.  I added chopped nuts (pecans, almonds) dried cranberries and 1/2 apple chopped) and it came out fantastic.  I took some to work and got rave reviews.

I like to play around with this recipe.  I just made two loaves.  Instead of oil I used unsweetened applesauce.  I also used some ground flax seed in addition to the Ener-G and threw in some vegan protein powder.  The final addition was a very large dose of walnuts.  The bread is moist, delicious and dense.

Just had my first bite and I'm addicted. I need this every day.

Made some slight adjustments such as only using 3/4c sugar, omitting the salt all together, 1/4c canola oil, 1/4c applesauce, adding a sprinkle of cinnamon and handful of chopped walnuts. Used the suggestion of 1/3c soymilk with 1tsp lemon juice.

I made this recipe last night, and it turned out FABULOUS! Even my non- Vegan boyfriend couldn't have enough of it. After reading the other reviews i made a few changes: Only used 1 cup Sugar (half brown, half evaporated cane) as i was using 3 very ripe bananas, used Wholewheat pastry flour only, 1/3 Cup of Canola Oil, and added Pecans, Cinnamon and Vanilla Extract. My loaf only needed 1 hour and 5 mins till it was crispy on the outside and cooked through. The Soy-buttermilk turned out great, thanks for that tip! All in all, a great recipe and will definately be making it regularly  :)

Uber-delicious and beautiful.  I followed the recipe except I used 3/4 c sugar, 1/2 c applesauce for eggs, only 1/4 c oil, and added 1/2 c walnuts.  I was worried that it was a little dry last night when I baked it but this morning it was perfectly moist.

That looks awesome and I love to make banana bread . Yummy. My son will be thrilled 8)
