Banana Nut Bread
What you need:
3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped
What you do:
1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

SO HOW'D IT GO?
I make this all the time, but tried it last night with all whole wheat flour and using applesauce instead of oil. I ended up doubling up on the applesauce so moisten the loaf, and I think it could've used even more. It came out a bit more dense than usual, but it's still delicious. ;)b

Very soft, very moist, rises beautifully. I added a few dashes of cinnamon and nutmeg. Took it to meet my boyfriend's omni family and they loved it.
I enjoyed this banana bread quite a bit, and I've made it several times now. Like others, I used less salt than recommended.

Oh yeah and I added 3 teaspoons baking poweder and drizzled the top with honey :)
I made this today with the following modifications....no sugar just 1/4 cup barley malt...no oil and I added 1/2 cup applesauce...I also added a few tablespoons pumpkin pie spice....I cook at 335F till done (about 45 minutes) it is sooooo ogood I cant stop eating it! I have almost finished the whole loaf!
My batter turned out really thick...there just wasn't enough liquid. I probably added almost 1 cup of soy milk, which seemed to do the trick consistency wise. I also added vegan chocolate chips and a bit of cinnamon. This turned out good. Next time, I'll probably add a little more sugar and cinnamon. Overall, a decent recipe

I add a 1 tsp of vanilla and cinnamon to give it extra yumminess :D
I made this into muffins, and they were great! I didn't have any nuts, so I just left them out but walnuts would be awesome in these. I sprinkled some sugar on the top of each muffin before baking, so they had a sweet, crunchy top. Definitely will make these again. Thanks!

When I first mixed this up, it didn't look like it would do much. I was surprised to see how perfect it came out of the oven. It rose nicely and had perfect color and texture. I didn't use the nuts because I didn't have any. My favorite banana bread recipe. :)>>>
