Banana Nut Bread Cookies
1 1/4 cups flour (I use unbleached, all purpose)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup oil (I use canola)
1/2 teaspoon vanilla
4 tablespoons nondairy milk
1 banana, mashed
1 teaspoon baking powder
handful walnuts, crushed
1. Preheat oven to 350 degrees Fahrenheit. Mix together flour, soda and salt in a small-medium bowl and set aside. Lightly grease a cookie sheet.
2. In a large bowl, mix together oil, sugar, milk, and vanilla. Mix in mashed banana and baking powder. Add ingredients in the small bowl and stir well.
3. Once it is well stirred, lightly mix in the crushed walnuts. Drop by tablespoons onto prepared cookie sheet. Bake 9-12 minutes (depending on your oven).
For a less greasy mixture, I'm sure you could add more milk and less oil, but I haven't tried it yet. And this recipe only makes 12-13 cookies for me, but I like to make giant cookies (heaping tablespoons for me!).'
SO HOW'D IT GO?
I've made these twice now. The first time I used the called for amount of oil. They were very oily to handle. This time I used only half the amount called for and made up the other half with apple sauce. Perfect. I used raisins the first time and walnuts the second time. They're both good and everyone likes them. I also use half and half white and whole wheat flour. I think it's better with cinnamon which I forgot to use this time.

Delicious cookies! Everyone loved them. I found them quite oily so next time I won't use so much oil - but I will definitely make these again soon. I added 1/2 cup of raisins - made them even more yummy. My grand daughter loves raisins.
LOVED these!!! I took them to a potluck and got complimented on them by non-vegans! Banana in place of egg is perfect and no need for margarine. Excellent.
these were soo good! we followed the recipe except for adding the walnuts because we didn't have any...and they worked out great for us. we took a big bowl full on a road trip and they made a great road cookie!

Holy Cow!! These are incredible! My husband is always making fun of me, saying 'my food' is disgusting..these shut him up haha! I didn't see in the directions when to add the soymilk, but I just guessed..turned out great.

I just baked them, and like you, I like to make cookies ginormous. Anyway they they turned out great. The substitution I used was 3/4 cup of oat flour, 1/4 cup ww flour, 1/4 cup of oat bran, for the oil I used applesauce, and used mashed cashews. They turned out amazing, thanks!!!
