Banana Oatmeal Cookies

What you need: 

2-3 overripe bananas, mashed, equal to 3/4 cup
1/2 teaspoon cinnamon
1/2 cup sugar (I use Sucanat, can use a combination of sugars also)
1/2 cup white flour
1/2 cup wheat flour
1 cup rolled oats
1 teaspoon baking powder
nuts of your choosing (very good with pecans and walnuts)

What you do: 

Preheat oven to 375 degrees.
Mash the bananas well.
Add cinnamon and sugar and mix well.
Add dry ingredients and mix well to just mixed.
Add nuts, if using. Add anything else you might want to add (chocolate chips, dried fruits, etc).
Drop by spoonful on to a lightly greased baking pan (I use a "pizza stone" and it works beautifully).
Bake for 10-15 minutes, size of cookie makes a difference (large cookies take longer to bake).
Check after 10 minutes and decide from there. Bake until bottom is lightly browed and tops are a little crisp.
Cool on a rack and then transfer to container.
Very good right out of the oven, but also great once cool. I love these for a filling dessert packed with protein (especially if you add nuts) after a light lunch.

SO HOW'D IT GO?

Quick, easy and yummy. I added 1 teaspoon of vanilla. They're great right out of the oven, and still chewy by later in the day. Delicious oaty banana flavors come right through without being too sweet.

I loved making these for treats for my friends. I am not Vegan and neither are they so I added 1/2 milk (or rice milk) and one egg. They are easy and quick! :D
