Banana Walnut Bread

What you need: 

1 cup unbleached granulated sugar
1/2 cup margarine (I used Earth Balance)
egg substitute for 2 eggs (flax meal blended w/water works best)
1 1/3 cups ripe mashed bananas (approx 2 large or three small)
2 1/2 cups unbleached all-purpose flour
1 slightly rounded teaspoon baking soda
1/2 teaspoon sea salt
1 cup chopped walnuts

What you do: 

NOTE: If possible, purchase whole walnuts and she'll them yourself. Pre-shelled walnuts tend to taste rancid, in my opinion.
Heat oven to 375 degrees.
Cream vegan sugar and vegan margarine. Stir in egg replacer and bananas. Sift together flour, baking soda and salt. Add to mixture, along with nuts and stir well. Pour into loaf pan greased with margarine and bake approximately 1 hour (will probably take more like 1 hour 15 minutes), until a toothpick stuck in the middle comes out clean.
Remove loaf from pan and cool on a wire rack.

SO HOW'D IT GO?

i made these last nite to take to work today...the batter tasted great (with a little less than 1 cup sugar + a tad brown sugar to fill the "cup")...after putting them into muffin tins and baking i realized i only used 1 cup flour, but the batter was still the right consistency...havent heard back yet from the coworkers, but they looked fabulous!

I made this using applesauce instead of an egg sub.  and 1/4 brown sugar instead of granulated sugar, adding 4 bananas instead of 3.  It turned out sooo good !!   :D
