Basic Pasta Dough
What you need:
1 cup ww pastry flour (we've found it works much better if half of this is unbleached white)
pinch salt
1 teaspoon olive oil
1/4 cup water
What you do:
Put it into a mixer with vegan bread hooks or a food processor, and knead until really smooth. I suppose you could also do this by hand, but I haven't tried it!
Weve also substituted 1/4 of the flour with kamut, buckwheat etc. to add extra flavor, and the recipe suggested that chopped spinach, herbs, or tomatoe paste could be added.

SO HOW'D IT GO?
This recipe is very easy, I put everything in the mixer and doesn't bother wiht the kneading. I just put it through my pasta machine a couple of times, folding it in half each time, it's almost the same thing as kneading. I did it with whole wheat flour but I think it would be best to use half whole wheat and half semolina, was still very good though!
I made them gluten free (well, tried to anyway) by using 1/2 cup brown rice flour, 1/4 cup white rice flour, 2 TB quinoa flour, 1 TB potato starch and 1 TB tapioca starch....let it rest for about 20 minutes while I gathered my filling ingredients and then made (again, tried!) raviolis with sweet potato and "cream cheese" filling...boiled them for about 5 minutes and covered em in pesto and soy free earth balance...nom nom nom

worked like a charm! ridiculously easy and super tasty. what more could you ask for! we added basil and oregano to the dough and made mushroom and tofu ricotta ravioli!
This recipe looks fantastically easy- but do you have an idea how many servings it renders? I just got a pasta-shaper-maker thing so I thought I'd use it for a dinner party tonight, but I have no idea how much dough to make! :P
I made this by hand today, I have never made pasta before and it was so good! ;)b
I had so much fun making it! :-D
I made some tortellini stuffed with spinach pesto and some ravioli which i am saving for tomorrow.
