The Best Lentils and Rice

What you need: 

2 Cups Brown Rice
1/2 cup lentils
5 cups water
I large onion, chopped
2 Carrots, chopped
2 - 3 cloves garlic, minced
1 vegetable boulion cube
black pepper
dash of cayenne (optional)
bay leaf

What you do: 

Bring the rice, lentils, onion, carrot, and garlic to a boil in 5 cups water. Reduce heat to low and add spice and bay leaf. Cover and simmer over low heat for about 45 minutes. Serve with tamari sauce. I like to also top it with sliced scallions and/or toasted pecans.
(Be sure to remove the bay leaf when finishe'd cooking)

SO HOW'D IT GO?

I modified mine just a little. Sauteed garlic in a teaspoon of olive oil, then toasted rice in that for a while before adding other ingredients.  Also added a teaspoon of dried basil and served the results with soy parmesan. Simple and simply delicious! Thanks! ;)

I made this recipe last night and it was delicious!!  I added a little more garlic and some cumin, cayenne, oregano and basil plus the veggi boullion..wonderful!!  and it made plenty even my meat eating hubby had seconds! :)

I'm not sure if I would say the best but its still very good!  I used 1 cup rice and 1 cup lentils only 1/2 and onion and used a tsp of both cayenne and ground cummin seed.  Came out really good!

When is the bouyon cube added and since i cant find them anyway... how much vegitable broth would be a good substitute???

I'm guessing it would be added when the water is supposed to be added if you had bullion cubes.

This was pretty good.  I think it depends on how much you like your veggie boulion and how much of it you use.  Next time I would use more...I ran out.  I would also use extra garlic and maybe some parsley.

really yummy recipe! i followed another suggestion on here and used 1 cup of lentils and 1 cup of rice and added about 4 cups of water. I also added 2 bay leaves instead of one, cumin, and turmeric which gave it a beautiful golden color. really good!

This recipe was great, simple, healthy and delicious.  My husband make this and we both loved it!  We would definitely make again.

Oh yum, this was great. I modified just a bit: I didn't have any onion so I didn't put any in and added kale. I reduced the rice to one cup, upped the lentils to one cup and added about 3 1/2-4 cups water. Served with some yogurt, just 'cause I put yogurt on everything. So yummy and cheap and easy and versatile!! Thanks for the recipe.

Loved this! My husband and I couldn't stop eating it. I used 2 bullion cubes and 4 cloves of garlic. Next time I'll probably add a little cumin. Really tasty and so cheap and easy to make (and super nutritious, too!).
