Best Tasting Pancakes Ever! Vegan or Otherwise
What you need:
1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
What you do:
1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

HOLY CRAP THIS IS DELICIOUS! Used a tablespoon of ground flax seeds for the eggs, sliced some bananas in, and voila - it was done and couldn't stop eating them. Husband declared these were the best pancakes he's ever had!!
This is my late-night snack almost every night! I make a double recipe using 1/2 all-purpose flour and 1/2 white whole wheat flour, flaxseed "eggs", and vanilla soy milk so I don't add any vanilla. I also use slightly less sugar (4 sort of rounded TBSP for the double recipe). I eat two pancakes a night for four nights, then make more! Haha! It's an addiction. I've also found letting the batter sit for about 10 minutes before cooking helps make thicker, fluffier pancakes!
This recipe is so good!! I use it to make waffles too. I just use brown sugar for the 3 tablespoons of sugar and add a little bit of cinnamon to the batter. I could eat them everyday!
Awesome! I make these a little more "powerful" by adding flax and hemp seed, as well as protein powder, peanut butter and rolled oats (oatmeal). I also use less sugar and throw in some blueberries. Great recipe!
