Blueberry Cobbler

What you need: 

2/3 cup flour
1/2 cup sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup soy milk
2 cups blueberries

What you do: 

Combine dry ingredients, add milk, and whisk until smooth. Pour into a greasd casserole dish and sprinkle blueberries on top. Bake at 350 degrees for 40 minutes.

This was super easy and really good! I overdid it on the blueberries and not all the blueberries sank to the bottom, so the center was a bit gummy. However, it still tasted really good - like blueberry pie filling. And this has to be one of the easiest dessert recipes ever. I will definitely be making this again!

The ultimate Sunday morning breakfast, served with vegan 'sausage' links, maple syrup, and a pat of soy margarine. If you whisk the dry ingredients together the night before, this is a snap to toss into the oven while you take a shower, read the paper, or clean up after the party you threw last night. One change I make to this recipe is the addition of 1/8 tsp. of ground nutmeg to the dry ingredients. This works fine with frozen or thawed berries with no change in cooking time!
