Blueberry Pancakes
What you need:
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup + 2 tablespoons sugar
2 teaspoons vanilla
2 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1 2/3 cups nondairy milk (I use soy)
2 tablespoons vegetable oil, if desired
1 cup blueberries (frozen or fresh)
What you do:
1. Combine ingredients except blueberries, and stir until blended. Stir in blueberries.
2. Preheat and oil a pan or griddle. Pour 1/4 cup batter into pan and cook until the edges are dry.
3. Carefully flip the pancake over and cook until golden.
Source of recipe: I went by someone else's recipe, but used my own portions and changed a few things.

Ever since I have found this recipe, I've used no other. This is a winner and a fan with non vegans too:)
Amazing! I would have taken a picture, but uh, I ate my pancakes too fast.
I just tried making these and man they did not work out! It must've been something I did wrong, because everyone else's turned out fine... idk, they just wouldn't stop absorbing oil. It was like I was making funnel cakes or something!!! and they wouldnt get solid enough for me to flip over so when I did it became a horrible sloppy mess.O well, I tried. :)
very good pancakes! made a very good breakfast.
These were great! I used Spelt flour and coconut milk (the new one from Silk, has a milder flavor than canned) and they turned out really good. My hubby had 4 of them and said they were superb!
Loved this recipe! Its also kid proof- my 3 yr old niece made them all by herself and even with the not so accurate measurements they still came out awesome! We also substitued rice milk, almond extract and blackberries. Delicious!
I just ate 2 of these for breakfast... yummy! I only used 2 Tbls of sugar and added a little more milk. I used 1 cup all purpose flour and 1 cup prairie gold w.w. flour. They were nice and fluffy.
Dammit, I forgot the baking powder! Mine had to be overcooked to get done, and they were stiff :( Tasty, but wrong texture- I'll have to try again with all the ingredients next time. :P
i have a talent for ruining pancakes, but this is a great pancake recipe. they were full and fluffy, and even though I burned the first four they were still tasty. i think the key is the large amount of baking powder. i used two medium bananas for the egg replacer. this is my new regular pancake recipe =)
I also used a mashed up banana for the egg replacement. These are amazing pancakes, truly! Some of the best I've had!
