Broccoli & Mushroom Alfredo

What you need: 

spaghetti for 1
2/3 cup broccoli florets (fresh or frozen)
1 cup nondairy milk
2 tablespoons white flour
1/2 teaspoon garlic puree or 3 crushed garlic cloves, to taste
salt and pepper, to taste
1 tablespoon olive oil
2/3 cup mushrooms, sliced
1 tablespoon margarine, optional
1 tablespoon vegan parmesan, optional

What you do: 

1. Cook the pasta according to directions on the packet. In the last 2 minutes of cooking, add the broccoli, then drain.
2. In a saucepan over medium heat, whisk together the milk, flour, garlic, salt, pepper, and olive oil. Stir slowly until bubbly, then reduce heat to low.
3. Add mushrooms and vegan margarine. Allow to cook for 5 to 10 minutes on low heat. Stir almost constantly. Taste and add more salt/pepper/garlic, if needed.
4. Serve over the pasta and broccoli and top with the parmesan for a quick, rich-tasting meal.
Most people can't tell that this creamy white sauce is vegan, and it makes a great low fat cholesterol free alternative to the real thing.

SO HOW'D IT GO?

Delicious (: I doubled the vegetables and included cauliflower because I had it, but I LOVED the sauce as is!! Cooking the mushrooms in the sauce really made it tasty. It was still quite delicious as a leftover the next day, too.

Delicious. I followed the recipe except I omitted the marg./oil and  upped the milkand garlic a little bit for taste. I can hear the sauce being scraped from the plate as I type!

Mmmmm!

I made the sauce with almond milk and added the margarine.  Additional to the recipe, I added nutritional yeast, italian seasoning, and a little nutmeg.

It was the PERFECT sauce for my butternut squash ravioli...the saltiness and richness of the sauce tasted great in contrast with the sweet richness of the squash. It also tasted heavenly with broccoli.  Oh me oh my.  YUM!

I can definitely say this sauce tasted CHEESY and RICH! Thanks for a great "alfredo" recipe!!  ;)b

This recipe turned out pretty well!  I used carrots instead of mushrooms (I love mushrooms, just didn't have any) and bowtie pasta because I just love bowtie pasta, can't get enough.  I doubled the recipe so there would be leftovers and the consistency of the sauce came out PERFECTLY!  Very much like "normal" alfredo.  It did seem a little bland even after tons of garlic, salt, and pepper, so I added some cayenne, italian seasoning and soy sauce (just a little!) and it came out great.  I'll make this again and maybe add some onions.

This would be a perfect meal to make for a picky non vegan eater. I put too much garlic for my liking. Next time I will be adding more veggies and spices. The suce can a bit much for the amount on the recipe. All in all, I liked it and will make it again.

I doubled up the recipe and made this last night. I added a bit of nutritional yeast because I seem to add that to everything. My boyfriend liked it and said that I should make it again, but I thought it was bland. I could taste the flour in the sauce. After coming back and reading the other reviews again though, I just may have to give it one more try before ruling it out. It looked and smelled really good.

Wow this was really good! Its hard to believe its vegan! I added a ton of nutritional yeast and doubled the recipe. I used broc and red peppers. This was so good and we are excited to have a new thing to make thats super super quick with ingredients we usually always have around the kitchen. Oh yeah, i added quite a bit of vegan parmesan to the sauce which gave it kind of an aged-cheeze taste that made it just right. you have got to make this!

;)b This is so good! I don't even know how it's possible. It tastes just like creamy alfredo to me.  I didn't feel the need to add nutritional yeast at all.  Maybe it's because I've not had real alfredo in years, and I've aquired a taste for fake-dairy things, but this was excellent.  I crave it every once in awhile.  I think that part of the "secret" is cooking the broccoli with the pasta towards the end, maybe the pasta absorbs some of the broccoli flavor or something.  Yum.  Thank you!

I didn't have mushrooms so I subbed carrots. Went well with the sweet taste of the sauce. this is the most alfredo-like sauce I've ever had.

I made this tonight and it's totally awesome!  I added some Follow Your Heart soy mozzarella cheese just before adding the mushrooms and it turned out amazing!
