Cabbage & Beans
What you need:
1 medium onion, chopped
1 1/2 tablespoons oil
1/4 cup water
2 carrots, diced
1/2 cabbage, chopped
salt and pepper, to taste
1 (16 ounce) can dark red kidney beans, drained
1/2 cup tomato sauce
What you do:
1. Sauté onion in the oil for about 3 minutes. Add carrot and water, and cook over medium heat about 5 minutes.
2. Add cabbage, salt and pepper, and cook for about 15 minutes, or until cabbage is barely tender.
3. Add tomato sauce and drained beans. Cook for about 3 minutes, and serve.'

I agree that while warm and filling, the recipe as it stands is very bland. After playing about with the seasonings it improved, and a lot goes to the quality of the tomato sauce you use. Simple, inexpensive...but to be hearty it needs seasoning to taste to balance the sweet blandness of the ingredients.
I just made this and it's very good! I did add and change some stuff though
- I steamed the cabbage insted of sauteing it. But latter added it to the onions and carrots once they were cooking. (About half way done.)
- Added a can of roasted diced tomatoes (drained) with garlic in it
- Added chilly Powder. Around 3 tablespoonds
Once that was all done I put it over half a sweet potatoe, cut up some cilontro and add hot sauce. SOOO GOOD!! ;)b ( I have A LOT left over and cant wait to taste it once it's bin sitting for a little. It should be even better)
I thought this recipe was pretty good, although not great. It was definitely warm and filling, but it just lacked a little something. In reading other reviews, I'm getting some good seasoning ideas (beans in chili sauce sounds awesome!). I didn't have tomato sauce, so I added a can of fire-roasted tomatoes (yummy!). I didn't think that it needed to cook for as long as the recipe says--I only let my cabbage cook 7 or 8 minutes. This left a little bit of crunch in it. I think this would be fantastic over mashed potatoes. I might try that next time. I served it with homemade bread and pureed butternut squash soup. This meal really hit the spot for a cold winter night.
This is so quick and easy! I threw in a stalk of celery, but I should have steamed it a little first. I also used a whole can of tomato sauce.

Made this for the first time last week. Husband not so keen on cabbage so I added extra onions, beans and carrots and we had it over mashed potatoes. Really good, filling and tasty. This'll become a regular meal over the winter! Thanks for the recipe!
Been making a similar dish for years using pinto beans and veg stock and toms cooked down (instead of tinned toms); easy, tasty and cheap. 4*
