Caribbean Surprise

What you need: 

1 (15 ounce) can black beans, drained
1 (15 ounce) can tomatoes, drained and juice reserved
1 cup frozen corn
1 1/2 cups canned or fresh pineapple chunks, drained and juice reserved
1/2 teaspoon ginger
1-2 teaspoons curry powder

What you do: 

1. Combine all ingredients, except tomato and pineapple juices.
2. Heat it all up in a saucepan. Add juice(s) if mixture is too thick.
Serve over rice or pasta. You can also add chopped peppers, water chestnuts, whatever.'

SO HOW'D IT GO?

I liked this one.  I really wanted to try the banana black beans that everyone is raving about, but sometimes bananas kill my stomach.  Anyway, I found this one and loved it. 

I resisted the urge to add some coconut milk.  Next time I think I will because that would make the sauce extra awesome.  I used a lot of the pineapple juice to make it nice and saucy plus some extra curry.  It was yum over rice.

Black beans and banana's are very good if you can get your tummy to agree with it. My ex is from Brasil and his mom used to cook black beans and rice all the time and his dad forced me to eat banana's with it one time (apple banana's actually - a hybrid banana - very interesting taste) and since then I always eat it that way

I made this for dinner tonight and it was awesome! My omni hubby says it's a keeper too. :)

I made a couple minor adjustments. I used a can of pineapple tidbits and then added some garlic powder, sauteed onions, and a small can of tomato paste because we like things a bit thicker. Anyways, it was very tasty over rice and I'm looking forward to leftovers tomorrow.

I made the recipe exactly as written for the vegweb potluck this past weekend.

Thoughts: I enjoyed the pineapple/black bean combo, and even though I don't like spicy, I would have doubled the amount of curry powder. It was a perfectly fine, tasty dish, good for when you get a hankering for pineapple, but it didn't wow anyone.

Alterations:  Because the pasta/rice amount wasn't suggested, I used half a box of bowtie pasta and that was a bit too much. I didn't add anything that the other folks on here suggested, but can see how cilantro/green peppers/scallions/peanuts, etc. would be quite tasty and appropriate.

Noam, I don't know why you thought you would like this recipe if you think black beans and pineapple don't go together.  That is a very, very common combination for Carribean food.  This receipt was very good and definately not the first time I've had black beans and pineapple together.  Obviously, you just don't like Caribbean flavor combinations.  So I wouldn't assume this recipe didn't get a bad review because people don't post them, because they do.  This recipe is just good.... if you like Caribbean food.
