Carolines Vegan Blueberry Mookies

What you need: 

2 cup blueberries
1/2 cup oil
3/4 cup fructose
2/3 cup apple sauce
1 teaspoon vanilla extract
2 3/4 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt

What you do: 

Whisk oil, fructose, apple sauce and vanilla.
Sift together flour to salt in a bigger bowl and add the dry ingredients. Make a hole in middle and pour in the first mixture.
When the Mookie batter is half mixed, add the blueberries.
Drop by tablespoons on cookie sheet and bake in 190ºC (375F for you guys South of the border -- just a friendly gesture from a French-Canadian :-)) for 30 minutes.
Best served warm, straight out of the oven!
Note: Mookies is a term I came up with when I first moved into my apartment and was stuck with muffin batter and no muffin tins: m-uffins + c-ookies = mookies! Voilà!
