Carrot Balls

What you need: 

1 pound carrots, sliced
2 tablespoons chickpea flour
3 tablespoons gluten flour
1 teaspoon thyme
1 teaspoon lemon zest
oil, as needed for frying

What you do: 

1. Saute or steam carrots until soft. Mash and add the remaining ingredients. Add 1 to 2 tablespoons water, if needed.
2. Knead the mixture for a while. If your mixture is to dry, add some more water. If it is too wet you can add some extra breadcrumbs.
3. Heat oil for frying. Form mixture into small balls and fry oil.

SO HOW'D IT GO?

These were so-so. They didn't POP for us as far as a fried appetizer goes. I thought I had half of a two pound bag of carrots, but as I mixed everything together, I still had to add quite a few tablespoons more of wheat gluten to get a workable and friable mixture. Anyway, these balls might be okay if I tossed the leftovers in some sauce. But I don't think I will make them again.
