Carrot Ginger Dip

What you need: 

1/4 cup grated fresh ginger
8-10 chopped carrots
1 tablespoon soy sauce
1 tablespoon rice vinegar (or red wine)
1 teaspoon sesame oil
1/2 cup vegan mayonnaise (Vegenaise)
several chopped scallions or garlic scapes
1/2 teaspoon turmeric (optional, for color)

What you do: 

Toss all ingredients into blender or food processor and process till smooth. Delicious with sesame crackers, pita or crudites!

SO HOW'D IT GO?

this was really good - didnt even use scallions or tumeric but it was still pretty banging and a good way to use up my carrots
