Chai Tea Breakfast Marathon Muffins

What you need: 

2 tea bags chai tea
1 cup hot water
1 cup whole wheat flour
1 cup rolled oats
1/2 cup oat bran
2 teaspoons baking powder
1-1/2 teaspoons cinnamon
1 to 2 bananas, mashed, or 1 cup of applesauce
1/2 cup maple syrup
1 tablespoon vegetable oil

What you do: 

1. Preheat oven to 375 degrees F. Grease muffin tins. Brew both bags of tea in the hot water.
2. In a bowl, mix together flour, oats, oat bran, baking powder, and cinnamon.
3. Stir in steeped chai tea, then bananas, maple syrup, and vegetable oil.
4. Spoon into prepared muffin tins. Bake at 375 degrees F for 20 to 25 minutes.
I eat a few of these the morning before a marathon. There is just enough caffeine to get me going, without dehydrating me over the course of the race. Furthermore, the oatmeal, bananas, and oat bran are staples in most runners race day breakfast meals.

SO HOW'D IT GO?

For the oat bran, I subbed half wheat germ and half ground-up bran flakes cereal.  I also used English Breakfast tea because it was all I had.  These were still great!  What I like best about this recipe is that it's not too sweet (which I think most muffins are), but not bland either.

It came out perfect..not too sweet just the way I like it. Added nuts on top for a little extra protien

These were really good.  I made some modifications and they came out great.  I made a half batch using 1/2 cup wheat flour, 1/2 cup rolled oats, 1/4 cup toasted wheat germ, 1 tsp baking powder, 1/2 cup brewed Chai tea, 1 tsp cinnamon, 1/2 cup apple sauce, 1/4 cup molasses, 1/2 cup chopped walnuts and 1/2 cup chopped dried cranberries.  I added 1/2 tbs canola oil but I'll leave that out next time as I think it was unnecessary.  I baked them for 25 minutes but they probably could have used about 3-4 more minutes.    Out of curiosity I added up the calorie count and (even with the oil) they came out to about 175 calories apeice.  Thanks for posting the recipe.

these are really great for breakfast.  and versatile! i've tried different combos of banana and apple sauce, and added different kinds of dried fruit and nuts each time.  good stuff for sure!

I just joined the site to say that these were amazing.

I used wheat bran instead of oat bran and added 1/2 c each of raisins and sunflower seeds as suggested above.  My roomate loved them - they are very moist and dense and I guess reminded him of something his old babysitter used to make!  I've been taking them to work for breakfast and they're probably the most healthy thing I can eat.  Thank you!

This recipe came out horribly for me.  :(  I followed the recipe exactly except for 1/2 cup oat bran because I had none. They didn't rise at all and refused to cook all the way. I kept them in there for over 30 minutes and they still were raw inside and wouldn't peel off of the muffin wrappers. They sounded so good, too.  :'(

amazing!  even my brothers ate them up!  so tasty and moist.  next time i'll add some walnuts, forgot the first time around

i forgot to mention that i added about 1/3 cup coconut and a handful of raisins. i also used applesauce in place of the banana and skipped the oil completely.

For whatever reason, these muffins didn't rise for me, so they were shaped like little, delicious hockey pucks.  I followed the recipe exactly.  I wonder if it has something to do with my oven.  Regardless these muffins tasted really good, I ate a whole bunch of them, and my boyfriend liked them too.
