Chana Masala
2 tablespoons vegetable oil
1 medium onion, chopped
1 large clove garlic, minced
1 tablespoon curry
1 tablespoon tomato paste (I used ketchup, how embarrassing)
1 (15 ounce) can chickpeas, drained, reserving 3 tablespoons liquid
1/2 tablespoon lemon juice
1/2 teaspoon salt
fresh black pepper, to taste
crushed red pepper, to taste, optional
1 tablespoon vegan margarine
1. Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium. Add garlic, curry, and paste. Stir and simmer about 2 minutes.
2. Add chickpeas, reserved liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally.
3. Add red pepper, to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until chickpeas are softened and dish is hot. Serve over rice.
Source of recipe: I don't know how authentic this is, but I whipped it up last night. It tasted great to me.

This was delicious, i didn't have any lemon but it still was great although the mixture did get very dry very quick so I was constantly adding water to it. Its great as it is but it works well as a base for other variations I added some chilli sause to it for a slightly different flavour >:D
I just made this for dinner and it was fantastic. The mixture got a little dry, but I just added a bit more liquid, then served it over couscous and steamed spinach. So good, so quick, and so cheap. Also, I had to use ketchup since I had no tomato paste on hand, but it didn't even matter!
I make this all time, it's incredibly easy to prepare and so very tasty. Everyone I've ever made it for loved it just as much as I did, veg*n or otherwise.
I've tried it with lemon juice and with coconut milk instead of lemon juice. My omni dh and I both love it with the coconut milk and with some Naan.
This was way easy (not a lot of chopping) yet I found it was lacking some authenticity. I ended up looking in another cookbook for the missing spices: cumin, garam masala, and cinnamin. After these were added (and you could throw in some ginger in the begining with the garlic) it was phenomenal!! I will be making this over and over again!
I agree, this isn't quite right without cinnamon and cumin seeds. Flavor the oil with the seeds. Mmmm!
