Chayote and Zucchini Stir Fry
2 tablespoons olive oil
1/2 onion, chopped
1 chayote, chopped
1 zucchini, thickly sliced
2 yellow crookneck squash, thickly sliced
1/2 teaspoon salt and pepper
1/2 teaspoon oregano
1/2 teaspoon basil
1. Heat olive oil in a large frying pan over medium heat. Add onion to pan (the oil should be hot enough to make the onion sizzle). Add chayote, and let cook a couple minutes.
2. Add zucchini and yellow squash. Stir in salt and spices.
3. Cover and ook about 12 minutes until edges of squash turn golden brown, or until the veggies are as well done as you like them.
Chayote is a squash that looks a little bit like a pear, with a texture a little like a potato (but not starchy). It does not cook as quickly as zucchini or yellow squash, so I recommend adding the chayote to the pan first and giving it a couple extra minutes to cook while you slice the zucchini and yellow squash.
