Cheesy Squash, Tomato and Zucchini Bake

What you need: 

1 clove garlic, minced fine
olive oil, as needed
3 medium zucchini, sliced thin
4 medium yellow squash, sliced thin
2-3 medium tomatoes, sliced thin
vegan parmesan or vegan mozzarella cheese, to taste
salt and pepper, to taste

What you do: 

1. Preheat oven to 375 degrees Farhenheit. Start by lightly oiling a 9x13" baking dish, and sprinkling with the garlic.
2. Layer the zucchini, tomato, and squash in rows until the entire dish is covered. You may have some left over, depending on how tightly you pack the veggies.
3. Drizzle lightly with olive oil (or use one of those nifty sprays), and then top with the vegan cheese. Season with salt and pepper.
4. Bake, covered, for 25 minutes. Check the veggies to make sure they are soft, then urn the broiler on, and broil until brown and bubbly. Serve hot!

SO HOW'D IT GO?

This was so good! I modified the recipe some and I think that added a lot of flavor. I added mushrooms to the layers and only used one tomato (just because they're not my favorite  ;)). I used a TON of garlic (6-7 cloves) and layered it on the veggies as well as underneath them as Sunshinedaydream95 suggested. I only had a butternut squash, but it was very yummy in the recipe. The biggest difference was that I added seasonings for more flavor--brewer's/nutritional yeast, thyme, oregano, basil, pretty much every italian seasoning I had in the place--and man! Yum-yum!!!! My fiance and I ate the whole pan in one sitting!

I have not yet been able to find a vegan cheese that didn't turn my stomach a little... so I only used a little of Tofutti Mozzarella slices...can anyone recommend a better brand?? Before I was vegan, I ate Veggie Slices (http://www.galaxyfoods.com/ourbrands/usa/veggie.asp) and they were DELICIOUS!!! But they have a milk product in them.

Anyway...with that being said, I think the garlic is what gives this recipe great flavor! So next time I would try to mix the garlic around more rather than keep it just on the bottom. Maybe some nutritional yeast would give a better cheesiness to it.
