Chewy Peanut Butter Cookies
2 cups whole wheat flour
1/2 cup sugar
1/2 cup brown sugar
1 1/4 cups peanut butter, smooth or chunky
1/2 cup applesauce
1/2 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoon vanilla extract, or to your liking

Preheat Oven to 350 degrees Fahrenheit. Mix sugars, flour, baking powder, and baking soda. Add peanut butter, applesauce, and vanilla. Stir together until mixed well and batter is smooth. Scoop small portions- about 2 tablespoons- onto an ungreased cookie sheet. Press in a criss-cross pattern with a fork. Bake for 10-15 minutes.
ALTERNATIVES/TIPS:
If the batter seems too mushy or too hard to work with right after mixing, put in the fridge for an hour or so. This makes the batter MUCH easier to work with.
For sugars - one cup maple syrup can be substituted. However, I have found that the amount of flour usually needs to be adjusted, as the batter may seem too wet otherwise.
You can adjust the amount of peanut butter to your liking- these are not extremely peanut buttery.

Amazing.
These were pretty good not very chewy or moist though. I think I'll keep looking for another good PB cookie recipe.They were fun to make and dip in some soy milk to moisten them up.
