Chickpea (Garbanzo) Roast
What you need:
1 cup canned mashed chickpeas (garbanzos) or soaked overnight, cooked for 1 hour and
mashed
1 cup cooked brown rice
1 cup breadcrumbs
1 x 16 oz can tomatoes
1 large chopped onion
2 tablespoons soy sauce
Half teaspoon each cumin and
Olive oil
What you do:
Fry onions, cumin and coriander slowly for five minutes in a couple tablespoons oil. Mix with the rest of the ingredients. Place in oiled casserole dish and bake for 40 minutes in a moderate oven.

I'm sorry, I made this and it wasn't great. It just didn't quite taste like what I had expected, or hoped, it would. :-\
