Chocolate Cayenne Muffins

What you need: 

1 (18 1/4 ounce) box red velvet cake mix (I use Duncan Hines-red velvet is vegan)
1 (15 ounce) can pure pumpkin
1-2 tablespoons cayenne pepper

What you do: 

1. Preheat oven 400 degrees F. Spray muffin pan with nonstick spray. Mix together ingredients.
2. Start out with 1 tablespoon cayenne pepper, taste, then add more if you are bold. The mix will be real thick like a browie mix.
3. Put into prepared muffin pan. Bake for 20 minutes, no longer.
These are so incredibly moist, and there is no added fat (oil or eggs). You could use a spice cake mix, add nuts, apples, carrots, use your imagination.
Source of recipe: Have you ever had pepper chocolates? They are addicting. I came up with this version of another basic recipe. After watching the movie "Chocolat" where the woman put pepper in her chocolates, I thought I would give this a try. The combination of chocolate and spice go nicely together. The original recipe is a Weight Watcher's recipe, which was just chocolate cake mix and pumpkin.

SO HOW'D IT GO?

These are exceptional. I didn't use cayenne because my grandson will be eating some.  Instead I added about 4 Tbls. of cocoa. These have such a creamy flavor. I had to let them bake longer because they weren't quite done inside. Next time I will reduce the heat to 350 fo 30 min. & make 14 muffins. I can't wait to try this with other flavors of cake mix.

These are good but add the cayenne a little at a time and test it out each time before adding more! I wasn't paying attention and just dumped a bunch in....bad idea! Other than that, awesome!

I just want to say how creative that was of you.  You saw a combination in a movie, and decided to try it in your muffins. That is really cool!
