Chocolate Chip Walnut Pumpkin Cookies
What you need:
1 cup vegetable oil
4 cup sugar
2 egg substitute (I use flax seeds and water)
5 cups flour
1/4 teaspoon ground ginger
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons nutmeg
2 teaspoons cinnamon
1 teaspoon all-spice
1 3/4 teaspoons salt
1 29 oz. can of pumpkin
2 cup vegan chocolate chips
1 cup chopped walnuts
What you do:
Beat oil and vegan sugar in mixing bowl. Add egg substitutes and beat well.
In a separate bowl, stir together the flour, baking powder, baking soda, spices, and salt.
Add vegan sugar mixture alternatively with pumpkin into flour mixture. Stir well after each addition.
Fold in chocolate chips, walnuts, and vanilla.
Drop by teaspoon onto a greased cookie sheet. Bake for 15-20 minutes or until golden brown at 350 F.

Hey...I don't know about everyone else, but when I made this, my cookies did not come out having a cookie consistency. Rather, they had a cakey (and not in the nice way--in the overdone with baking soda way) consistency, and I didn't much enjoy them. To correct this after the first batch, I tried cooking them longer and they burned on the bottom (I hate that!). I followed the recipe exactly. Any idea what went wrong?
I used soy flour instead of regular flour, no walnuts, and brown rice syrup instead of sugar, they tasted great.
I have made these twice, and I must say, the second time was better. I halved the recipe this time, using sucanat for the sugar replacement. I also made them bigger, using heaping tablespoons. Even at half of the recipe, it made three dozen cookies.
They were a big hit, and everyone loved them. I used 2 teaspoons of vanilla also, and they were great!
I love how these cookies have a more cake like texture.
