Chocolate Mocha Cake
3 cups unbleached all purpose flour, sifted
1 cup unsweetened cocoa powder, sifted
1 1/2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
2 cups cold coffee
1 cup canola oil
1 tablespoon pure vanilla extract
1 tablespoon white vinegar
1. Preheat oven to 350 degrees F. Spray a 13x9" metal cake pan with cooking spray. In a large bowl, combine the flour, cocoa powder, sugar, salt, and baking soda together.
2. Make a large hole in the middle of the mix and add the coffee, canola oil, vanilla extract, and white vinegar into the hole.
3. Mix the ingredients together until it makes a smooth batter. Pour the batter into the cake pan and bake 35-40 minutes, or when an inserted toothpick comes out clean.

Happy to hear you liked the cake. If you want a more intense flavor you can also add 1 1/2 tsp of Coffee Flavor Extract. That's what I do for family members who really love coffee.
I made this last night and it is a good, spongy, and very chocolatey. It would work well with a frosting, but also works without.
This cake was easy and fast to make, another plus.
I used olive oil since it is what I had (not EVOO, just pure). I used Trader Joes unsweetened powdered cocoa, and a french press for the coffee. I baked it in a large rectangular lasagne pan for 40 minutes.
I ended up using 1 1/2 c of the coffee only (it seemed too liquid so did not want to add the last 1/2 cup). The change I will make next time is to use espresso coffe instead, so it has a more pronounced mocha flavor.
