Chocolate Pumpkin Amazingness

What you need: 

1/2 (12 ounce) package firm tofu
1 (15 ounce) can pumpkin puree
1/2 to 1 cup sugar, to taste
1 teaspoon vanilla
1/2 cup cocoa powder
cinnamon, to taste
nutmeg, to taste
cloves, to taste
1/4 cup nondairy milk
nondairy whipped cream, for topping (I like Soyatoo Soy Whipped Topping)

What you do: 

1. Preheat oven to 400 degrees F. In blender, mix all ingredients, adding milk to make a batter like consistency. I like it pretty thick, adding just enough milk so it is all mixed together.
2. Pour into 8x8" square pan, or a pie pan works. Bake for 30-40 minutes, depending on how long you can wait.
3. Top with whipped cream and cinnamon for looks.
This would probably be amazing in a crust, but we were lazy, and wanted to cut a few calories.

This recipe was delicious and so easy I could make it all the time.  A few of my friends tried it and loved it as well.  Great recipe.  I used hardly any soy milk and I liked it with the full cup of sugar.  Thanks for the post.

This was definitely not amazing. The flavor was alright, though I added less cocoa, but not that great. It felt like mud going down, and I had to take a sip of something with every bite just so it wouldn't stick in my throat. I baked it in a graham cracker crust and put whipped coconut cream on top, which was the only thing which made it edible. I wouldn't waste calories on this again. The whole idea of putting cocoa in a pumpkin pie is a good one though, so maybe I'll run with that.

I did not think this was all that great. It was definitely missing something, but I'm not sure what. Not quite sweet enough, not quite the right texture. Edible though.....we did almost finish all of it! I think it would be good inside of a cupcake or something. Does anyone know how to make a good dairy free whipped cream? That may have helped. I don't want to use hydrogenated cool whip and I can't find soy ones anywhere!

OOOOOOMMMMMMGGGGGGG this was like THEEEE most ammazzzzzing dessert ever!  Whoever the girl is that created this is one beautiful, AMAZING lady! Man, I would live vegrunner to come to my house and be my personal chef!

Pretty good! This is simple and easy to make. I would agree with your boyfriend that it could be a tad sweeter and I would use just a little less cocca. This isn't the best picture in the world, but I made it with a crust. 8)
