Chocolate Tofu Mousse

What you need: 

1 (16 ounce) package silken tofu
10 ounces chocolate chips (preferably barley sweetened)
3 tablespoons maple syrup
1 vegan graham cracker crust, optional
fruit, to garnish, optional

What you do: 

1. Blend tofu in food processor (or blender) just until smooth. Melt chips over double boiler.
2. Add maple syrup to melted chocolate and combine. Put chocolate and syrup mixture into processor and mix with tofu until creamy.
3. If desired, put into a graham cracker crust. Chill. Top with fruit.

SO HOW'D IT GO?

I know that mousse is a dessert... but do you just serve it like that? or do you serve it with cookies or something?

this is SO decadent!

I made a half recipe with peanut butter:)

Here are the proportions:
8 oz silken tofu
4 oz choc chips
1/4 cup PB (i used 1/3 cup, and it was a bit too much)
2 tbsp brown sugar
1/2 tsp vanilla

melted pb, choc & brown sugar together. vanilla went in the blender with the tofu.

Fantastic!  My only advice if you intend to serve it in wine glasses is to transfer the mousse directly into the glasses and chill as such directly after blending. I chilled the mousse in a bowl and it didn't look as smooth when I tried to serve it into the wine cups later on.

This is so easy to make. It is super rich & too dense to be called mousse....but I really like how it tastes so the next time I make it, I will put it in a flat glass dish & call it 'fudge'. :)

This past week, the hospital system I work at held a 'recipe cook off' to end Nutrition month. I wanted to bring in something that would wow them, so I made this mousse recipe for them. Well, it won 'best dessert' & my prize for winning is 2 free months at a local gym.

I like to put raspberries in mine! I use a fine mesh strainer to remove the seeds. I also have the chips melt in a saucepan along with a bit of soy milk. it works just fine.

Has anyone tried this with unsweetened carob chips? This is what I have so I will try it and let u know.

I made a few changes to the recipe:
I melted the chocolate chips
my husband just had it and loved it. I can't wait to give it a try myself!

This was sooo good.  I used peanut butter/chocolate swirled chips (I am not vegan) and vanilla.  It was the best mousse I have ever had.

I absolutely love this recipe!  I make it about once a month.  The last time I made it, I added 1/2 cup each coconut and crushed almonds.  Yum!!!
