Chocolatey-Chippy Faux Chocolate Chip Cookies Recipe
2 1/4 cups flour
2/3 cup sugar
1 cup brown sugar
1/3 cup oatmeal (or bran, or equal part combination)
1 teaspoon salt
1 teaspoon baking soda
1/8 cup vegan margarine
4 tablespoons ground flaxseed or egg replacer for four eggs
1 cup applesauce
1 tablespoon vanilla
2 cups semi-sweet carob/chocolate chips
1 cup walnuts (optional)
1. Preheat oven to 375 degrees Fahrenheit. Add all dry ingredients into food processor and give `em a good, quick whirl. Follow it up with the wet ingredients and blend well. Check the consistency of the dough afterwards; if it seems a bit watery, you may want to add a tiny bit more flour until you get a decent thickness, but I assure you that you want it as thick as store-bought cookie dough.
2. Pour the dough mixture into a large bowl. Add the chocolate chips (and nuts if desired), and mix well with a spoon. Lightly spray cookie sheets, and plop about 2-ounce dollops of the dough onto the sheet. Bake 10 to 15 minutes.
VARIATION: For softer "cookies", you may want to try pouring and evenly distributing the dough (but not to the edges) on the sheet like you would brownies. After the cookies are ready, cut into squares. These won't have the same texture as regular cookies, but are just as good.
