Coconut Yam Stew

What you need: 

3 large yams, peeled
1 yellow cooking onion
2 zucchini
2 bunches of spinach
4 cloves garlic minced
1/4 cup chopped cilantro
2 cups coconut milk
1 cup soy/rice milk
2 tablespoon curry powder
1 tablespoon tummeric
1 teaspoon ground ginger
2 tablespoon brown sugar
salt, pepper, and cayene to taste
oil to coat large pot

What you do: 

Coat bottom of large pot with a few TBS of oil. Chop onion and simmer on low. Chop veggies into chunks and toss in with onion. Raise to medium heat, cover and cook about 10 minutes, stirring every so often till things are golden and spinach is cooked. Add coconut and soy or rice milk. Add garlic, cilantro, and spices. Cover and let stew about 30 min, stiring occasionally. Add more milk as needed for consistancy. Add more vegan sugar or curry to your taste. ENJOY!
