Corn Salad
4 cups of corn (I like to use it off the cob - no packaging waste- but frozen would work)
1/2 cup fresh cilantro (green leafy herb)
1 red pepper
1 red onion ( I like to use a large one but use as much you like!)
red wine vinegar & Olive Oil (store bought or see below)
Salt and Pepper (optional)
Cut corn off the cob and steam just enough to soften - maybe 5 -10 minutes (I eat it raw too - try it!). Chop up the pepper and onion into pieces about the size of corn. Chop up the cilantro into tiny pieces. This all could be done in a food processor but I find the chopping theraputic (especially the cilantro because it smells so good!). Add all these together with the corn into a large bowl then toss with the dressing. To make your own dressing, its easy just to add some oil to coat then add the vinegar to taste. Then if you like add a few pinches of salt and pepper.
My sister bought this salad at a fancy-smancy gourmet deli and paid an outrageous amount for such a simple dish (in a plastic container)! Good thing she has me to figure out a similar recipe, huh? :) Good luck!
