Creamed Chipped Beef on Toast
2 tablespoons margarine
2 tablespoons flour
2 cups unsweetened soy milk
3/4 teaspoon salt (or to taste)
1/4 teaspoon garlic salt (optional)
1/2 teaspoon pepper (or to taste)
1/4 cup chopped salty "meat" (such as chopped Lightlife Smart Bacon or Pastrami deli
slices)
4-6 slices of toast
Creamed Chipped Beef on Toast is a classic U.S. military dish and was popular in my family served as a warm breakfast on a cold winter day. I woke up with a craving this morning and wondered if one could make a vegan rendition. As it turns out, it's actually quite easy!
First, melt the margarine over low-medium heat. Then, add the flour and whisk to make a roux.
Once the flour and margarine are mixed, slowly add the soy milk, stirring constantly to eliminate all lumps.
Add the chopped meat substitute, salt and pepper and continue to stir constantly until the mixture begins to thicken. Remove from heat once it has reached the desired creamy consistency.
Spoon a generous serving over a piece of toast, eat and enjoy!
The traditional version is made with canned chipped beef and can be quite salty. Depending on your tastes, I would recommend adding the meat first and then adding more salt to taste.
Another family variation on this idea is Creamed Asparagus on Toast, which is essentially the same thing but using chopped steamed or canned asparagus rather than meat.

One of my favorite childhood meals. I made this with Tofurky Hickory Smoked and it was fan-freaking-tastic. Might try with homemade seitan next time.

I used Smart Strips® Chick'n strips (warmed them up for 90 seconds first in the microwave) and added a little more flour (1/2 more tablespoon). It turned out AMAZING and it tasted exactly like real creamed chipped beef. I'm in love.!
