Creole Red Beans and Rice
1 (16 ounce) package red beans (I use Camellia)
1 large onion, chopped
3-4 garlic cloves, minced
1 bell pepper, finely chopped
2 tablespoons garlic powder
2 tablespoons onion powder
2-4 teaspoons salt
2-3 teaspoons black pepper
1 teaspoon paprika
2 tablespoons dried parsley
2-3 teaspoons cayenne pepper
1 bouillon cube (I use not-chicken)
3-4 tablespoons olive oil
1 (14 ounce) package vegan Italian sausage, sliced (I use Tofurky)
1. Place red beans in a bowl covered with water and soak overnight. Once the beans have soaked, dump all ingredients except sausage in a crock pot. Pour in water to cover, plus 1".
2. Cook on high for about 4 hours, adding water as needed. Take out a few beans to see if they're soft. If not, keep checking every hour or so.
3. Once soft, take out most of the beans and mash them, then add them back to the crock pot. Add the sausage to the beans and continue cooking for about an hour. Adjust the seasoning, to taste.
Serve hot over cooked rice.

SO HOW'D IT GO?
I just made this for dinner today. Pretty much followed the recipe exactly. Came out so yummy my omni bf says we can't buy the prepackaged stuff anymore. The only major differences were I made it on the stove top by simmering the beans in 5 C. water/veg bouillon for an hour, then added everything else and let simmer for an additional 3.5 hours, stirring occasionally, and adding a lil creole seasoning and a few baco bits for smokiness into the mix. I did let my beans soak and then sit in the fridge for an extra day before making this, so that may be why they got nice and tender quicker.Thanks for the great recipe!
