Curry Spice Cookies

What you need: 

2 1/2 cups whole wheat flour 1 1/2 cups brown sugar 1 1/2 tablespoons baking soda 1/4 tablespoon sea salt 2 1/2-3 tablespoons curry powder 1/4 teaspoon cinnamon 1/2 tablespoon nutmeg 1/2 tablespoon cloves 1/8 teaspoon all spice 2 bananas, mashed 1 tablespoon olive oil 1 1/4 tablespoons vanilla extract 1 tablespoon almond extract 2 1/2 tablespoons vegan butter (I used smart balance) 1/3 cup water cinnamon sugar, to taste

What you do: 

1. Preheat oven to 350 degrees F. Mix dry ingredients in a bowl. In a separate bowl, mix the wet ingredients. Combine all ingredients together, and mix well until thick and sticky. 2. Optionally, leave dough out for 15 minutes or refrigerate for 30 minutes. Put foil in a cookie sheet, and add spoonfuls of cookie dough 2" apart from each other. 3. Sprinkle with the cinnamon sugar, and bake for 12-18 minutes (if using white sugar, 10-15 minutes). Source of recipe: I wrote this recipe. I used inspiration from 3 other cookie recipes to figure out what binders to use in it, and the curry and spicing was all my idea.
