Dairy-Free French Toast
1/2 cup fortified soymilk
1/2 cup applesauce (or try 1 mashed banana instead)
2 tablespoons vegetable oil
1 tablespoon flour
pinch of salt
dash of cinnamon
4 slices dairy-free whole wheat bread
1) In a bowl, mix together soymilk, applesauce, and 1 tablespoon of the oil. Add flour, salt, and cinnamon to make batter.
2) Heat a nonstick griddle or frying pan over medium high flame until a few drops of water drizzled onto it forms beads and bounces around. Pour remaining oil onto the griddle and heat until hot.
3) When oiled griddle is hot, quickly dip two bread slices into batter, lightly coating both sides. Place bread slices on hot griddle and cook for 1 or 2 minutes on one side and flip with spatula, and cook on opposite side for another minute or 2. Continue cooking, flipping occasionally, until both sides are browned, about 5 minutes in all.
4) Add more oil to griddle, if necessary, and repeat with any remaining bread. Serve French toast with maple syrup, organic soy yogurt, or sprinkle with powdered sugar.
SO HOW'D IT GO?
i tried it this morning it was okay i think next time i'll add alot more vanilla and cinnamon i tasted to much applesauce but i still enjoyed it thanks! :) oh and i toasted my bread first so it wouldnt be so soggy! :) oh and i didn't use oil i just sprayed some pam in the mix!
Today, I made this with a banana instead of applesauce. I added more than a dash of cinnamon and some nutmeg, as well as 1t of vanilla. I found that 1T oil was too much per slice for cooking. Instead, I did a slight coating after every piece, and that worked well! I had a hard time figuring out when to flip it, but I think the key is to wait til the bread can move freely - then you know that side is crispy.
I served this with maple syrup and strawberries - delish!
this turned out great! my best attempt at french toast yet. I used the banana and the end product was definitely banana-y, but in a very good way. i served these with maple syrup.

we make our own chunky applesauce, so we were't sure if it would work, but it did! and since it was chunky some of the apples caramelized and made it extra tasty.
we've tried french toast before, but it was always soggy so we got a loaf of unsliced sourdough, that way we could cut thick pieces that wouldn't 'sog up'
also, to get it less soggy heat the oil on high until it's super hot, then turn your heat down to medium or medium high, that way the bread won't sit and absorb the oil and milk while cooking!! YUM!!

The first time I made it I used mashed bananas and it was great...but I've never been able to replicate it. Every other time it sticks to the pan, I've tried it at different temperatures and doing just a quick dip not letting the bread get too saturated, but it usually sticks or stays soggy...Bummer.
Thanks iamerin! I'll try that. :) I've never used garbanzo bean flour before. Actually the recipe posted here turned out just fine once I put the french toast in the oven for awhile. The edges got burned, but other than that it was pretty tasty.
Desperate! I've tried several vegan french toast recipes, including this one and they're just not turning out for me! I feel I'm cursed or something since I see so many other great reviews. I followed the recipe exactly - used wheat flour and wheat bread. This one turned out super soggy so now I've got in the oven on 400. Another one I tried stuck to the pan :( Please advise cuz I'm dying for french toast!!!
The best recipe i've ever tried for french toast is mixing garbanzo bean flour with soy creamer, and dipping your bread in there adn frying it. you wouldnt think it, but it turns out SO good and is so much like what i remember. i think i saw the recipe on post punk kitchen but i'm not sure. it was a long time ago and the recipe is now a staple in my house!

I just made this and it truly is amazing. I substituted half of the banana for half a serving of tofu for some extra protein, and it really turned out well. You have to make sure to mix the tofu in really well though.
I've been meaning to give MAJOR kudos on this recipe for a really long time. I've made countless times since I've found it on here and have fallen in love with this recipe. I would pick it over dairy french toast any day!
